White Chocolate Mousse
Ingredients -
250g white chocolate
200g Greek yoghurt
250ml whipping cream
chocolate curls or flake for decoration

Melt the white chocolate until smooth for a total of 3 minutes in the microwave (stirring occasionally) or over a pan of hot water.
Whip the cream until stiff.
Stir in the melted chocolate.
Add the yoghurt.
Mix until completely blended together and pour into small glass dishes or a big bowl
Chill for at least 3 hours before serving.
Sprinkle with flake or curls


Christmas Spice Biscuits
Ingredients -
175g butter
200g caster sugar
1 egg, beaten
1 teaspoon ground mixed spice
½ teaspoon ground ginger
½ teaspoon cinnamon
275g plain flour
½ teaspoon baking powder


Beat the butter and sugar until creamy. Stir in the egg a little at a time until it’s fully incorporated and the mixture is smooth.
Sift in the flour, spices and baking powder, then stir to form a soft dough. Chill it in the fridge for 30 minutes.
Preheat the oven to 180˚C/Gas 4. On a floured surface, roll out the dough to about 5mm thick. Cut out shapes with cookie cutters and place them on a lightly greased baking tray, leaving a little space between each. Bake for 10-12 minutes until golden.
Cool on a wire rack then decorate as you wish


Cadbury Truffles
Ingredients -
250g Cadbury's chocolate
7 tbsp double cream
cocoa powder (or grated chocolate, to cover)

Put a saucepan of water on to boil
While waiting, break the chocolate up into small pieces and put it into a glass bowl
Once the water has reached boiling point, turn it down to a simmer and put the bowl of chocolate on top of it
Wait for the chocolate to melt until it is smooth with no lumps, stirring occasionally
Once all the chocolate has melted take the bowl off the saucepan
Add 7 tablespoons of double cream and mix this together
Once mixed, cover the bowl and place in the fridge for about 45 minutes
After this time remove from fridge and shape the mixture into little round balls and roll in the cocoa powder or grated chocolate
Once you have used all of the mixture place the truffles in the freezer for 10 minutes

Wish 1.
My wish would be for my Dad to get some quality of life back after his massive Stroke last year.

Wish 2.
My wish would be for World Peace. Too many awful things going on, its no place to bring Children into.

Wish 3.
My wish would be to have money to help me live comfortably and not just live hand to mouth.
