With Christie Barlow

It’s starting to look a lot like Christmas!
I simply adore Christmas and Christmas Eve is my most favourite time of the year. For me, the festive season is about spending quality time with my friends and family and the joy of giving presents to others. Thanks to the great British Bake Off my Christmas Eve morning is spent with my four excitable children in the kitchen with our pinny’s on, usually surrounded by every possible ingredient. We love to make homemade goodies which include Gingerbread men and chocolate truffles. I sometimes wrap them up in tissue paper or I pop them inside mini baskets tied up with red ribbon and a sprig of holly.
Here is our favourite Gingerbread man recipe and I can guarantee the smell of the gingerbread wafting through the house is divine!

Ingredients (Makes 8)

350g plain flour
2tsp ginger, ground
1tsp bicarbonate of soda
100g butter
175g soft light brown sugar
1 egg
4 tbsp golden syrup

Preheat oven 190'C/Gas mark 5
Put the flour, ginger and soda into a bowl and rub in the butter
Add sugar and stir in the syrup and egg to make a firm dough
Roll out to about 5mm thick and cut out your gingerbread men
If you don't have a gingerbread man cutter then use whatever you have - stars and hearts are just as tasty
Put a sheet of baking paper on a tray and evenly space out the biscuits, bake for 10-15 minutes until golden brown
Leave to firm up for a couple of minutes before placing on a wire rack to cook
Once cooled, decorate with icing
Makes approximately 20 biscuits

Once we have finished baking and have sampled the delights we wrap up warmly in our winter woollies and coats and amble across the fields of the local country estate with our mad cocker spaniel Woody for an hour or two. As soon as we return home everyone enjoys a mug of hot chocolate and we throw the logs on the fire. We gather together around the log burner and everyone puts away their smart phones and we play some old fashion games instead. We have SO much fun and board games allow all the family to get involved. I always have a cheeky glass of sherry or two!
Christmas is a magical time for us and I hope it is for you too.
Wishing you all a very Merry Christmas and a Happy New Year, oh and a very big box of chocolates!

Warm wishes,
Christie  x
